  • 150 g 5.3 oz Guanciale or pancetta
  • 2 piece 2 piece Egg yolk
  • 1 piece 1 piece Whole egg
  • 60 g 2.1 oz Pecorino Romano (grated)
  • 2 tbsp 2 tbsp ZenOil
  • 1 pinch 1 pinch Black pepper (generously)

Instructions

    Cook pasta in salted water. Reserve 1 cup of pasta water.

    Slowly fry guanciale over medium heat until crispy, letting the fat render out.

    Whisk together egg yolks, one whole egg, grated pecorino and plenty of black pepper until creamy.

    Take pasta off the heat, add guanciale. Stir in the egg cream and add pasta water until silky smooth.

    Drizzle ZenOil over the top, serve with extra pecorino and black pepper.
