Instructions
-
1Preheat oven to 350°F (180°C). Grease two 20 cm sandwich tins and line the bases with baking parchment.
-
2Beat the cannabutter and caster sugar together until pale and fluffy — about 4 minutes with an electric mixer.
-
3Add the eggs one at a time, beating well after each. Add vanilla extract and mix to combine.
-
4Sift in self-raising flour and baking powder. Fold gently until just incorporated. Add milk and stir to a smooth, dropping consistency.
-
5Divide batter evenly between the two tins and smooth the tops.
-
6Bake 20–25 minutes until golden and the sponge springs back when lightly pressed. Cool in tins 5 minutes, then turn out onto a wire rack to cool completely.
-
7Spread strawberry jam over the base layer, top with whipped double cream, sandwich with the second sponge, and dust with icing sugar.
Pro Tips
- Do not open the oven during the first 20 minutes — the sponge will sink.
