Instructions
-
1Preheat oven to 160°C (320°F). Line two baking trays with baking paper.
-
2Combine rolled oats, desiccated coconut, flour and brown sugar in a large bowl.
-
3Melt cannabutter and golden syrup together in a small saucepan over low heat until smooth.
-
4Dissolve bicarbonate of soda in boiling water, then stir immediately into the cannabutter mixture — it will foam up. Pour over dry ingredients and mix to a firm dough.
-
5Roll tablespoons of mixture into balls and place on trays 4 cm apart. Flatten gently.
-
6Bake 12–15 minutes until deep golden brown. They will still be slightly soft in the centre.
-
7Cool on trays 10 minutes before transferring to a wire rack — they crisp up significantly.
Pro Tips
- Golden syrup is essential for authentic ANZAC flavour — do not substitute.
- Do not overbake — pull them when they look one shade too pale. They firm up as they cool.
- Start with 1 biscuit and wait at least 90 minutes. Label the tin clearly.
