  • 1 tbsp 1 tbsp Golden syrup
  • 100 g 3.5 oz Rolled oats
  • 80 g 2.8 oz Desiccated coconut
  • 125 g 4.4 oz Plain flour
  • 200 g 7.1 oz Brown sugar (firmly packed)
  • 2 tbsp 2 tbsp Boiling water
  • 1 tsp 1 tsp Bicarbonate of soda

Instructions

    Preheat oven to 160°C (320°F). Line two baking trays with baking paper.

    Combine rolled oats, desiccated coconut, flour and brown sugar in a large bowl.

    Melt cannabutter and golden syrup together in a small saucepan over low heat until smooth.

    Dissolve bicarbonate of soda in boiling water, then stir immediately into the cannabutter mixture — it will foam up. Pour over dry ingredients and mix to a firm dough.

    Roll tablespoons of mixture into balls and place on trays 4 cm apart. Flatten gently.

    Bake 12–15 minutes until deep golden brown. They will still be slightly soft in the centre.

    Cool on trays 10 minutes before transferring to a wire rack — they crisp up significantly.
