  • 150 ml 10.1 tbsp Double cream (toffee sauce)
  • 50 g 1.8 oz Unsalted butter (toffee sauce)
  • 1 tbsp 1 tbsp Black treacle

Instructions

    Preheat oven to 375°F (190°C). Grease a 20×30 cm baking tin. Soak dates in boiling water with bicarbonate of soda for 10 minutes, then mash roughly.

    Beat cannabutter and muscovado sugar until fluffy. Add eggs one at a time, then vanilla. Fold in self-raising flour, then stir in the date mixture. The batter will be loose — this is correct.

    Pour into the tin and bake 25–30 minutes until the surface is firm and a skewer comes out clean.

    Make toffee sauce: combine remaining muscovado sugar, double cream, unsalted butter and black treacle in a saucepan. Heat gently until dissolved, then boil 2 minutes until glossy.

    Poke the warm pudding all over with a skewer and pour half the sauce directly over it. Leave 5 minutes to soak.

    Portion and serve with remaining warm toffee sauce. Accompany with vanilla ice cream or clotted cream.
