  • 55 g 1.9 oz Cannabis-infused butter
  • 50 g 1.8 oz Granulated sugar
  • 5 tbsp 5 tbsp Unsweetened cocoa powder

  • 240 g 8.5 oz Graham cracker crumbs
  • 100 g 3.5 oz Unsweetened shredded coconut
  • 60 g 2.1 oz Finely chopped walnuts
  • 55 g 1.9 oz Unsalted butter (softened — middle layer)
  • 2 tbsp 2 tbsp Heavy cream
  • 2 tbsp 2 tbsp Vanilla custard powder
  • 240 g 8.5 oz Icing sugar (sifted)
  • 170 g 6 oz Dark chocolate (55–70%, chopped)
  • 1 tbsp 1 tbsp Unsalted butter (for top layer)

Instructions

    Line a 20 cm (8-inch) square pan with parchment. In a double boiler over low heat, melt both butters with sugar and cocoa until smooth. Remove from heat.

    Whisk beaten egg into the warm chocolate mixture — the heat cooks it through. Stir in graham cracker crumbs, coconut and walnuts until fully combined. Press evenly into the prepared pan. Refrigerate 15 minutes.

    Beat softened butter with custard powder until fluffy. Add cream and icing sugar gradually, beating until smooth. Spread evenly over the chilled base. Refrigerate 20 minutes.

    Melt dark chocolate and 1 tablespoon butter together until glossy. Pour over the custard layer and tilt to spread evenly.

    Refrigerate at least 1 hour until the chocolate top is fully set.

    Score the chocolate before it fully hardens, then cut into 16 bars with a warm sharp knife.
