Instructions
-
1Melt infused cannabis butter (see infusion tips). Finely crumble Leibniz crackers in a freezer bag using a rolling pin. Mix well with the melted butter until everything is evenly moist.
-
2Heat blueberries with 1 tbsp sugar, a splash of lemon juice, and a splash of water in a small pot over medium heat for 5–8 minutes. Lightly mash — do not fully puree, leave some chunks. Let cool.
-
3In a bowl, use a hand mixer to cream together quark, cream cheese, sugar, vanilla sugar, vanilla extract, and lime zest/juice until smooth. The mixture should be lumpy-free.
-
4In a separate cold bowl, whip cream until stiff peaks form. In several portions, carefully fold into the quark mixture using a spatula — the goal is airiness, not vigorous stirring.
-
5Layer in glasses: First press the cracker-butter mixture firmly as the base. Then a layer of blueberry cream, followed by the cheesecake cream on top. Finish with fresh blueberries as decoration.
-
6Cover glasses and chill in the refrigerator for at least 2 hours — better overnight. The base will absorb moisture and become firm-crumbly, the cream will set. Serve well chilled.
