  • 150 g 5.3 oz Sugar

Instructions

    Infuse cannabis-infused butter in the heavy cream over low heat for 30 minutes (do not boil). Strain through fine mesh.

    Heat cannabis-infused cream with milk in a pot to 176°F (80°C) (do not boil).

    Whisk egg yolks with sugar until foamy and the mixture becomes lighter in color.

    Slowly pour hot cream mixture into egg yolk-sugar mixture while whisking constantly (tempering — not too fast!).

    Return mixture to pot and heat over medium heat while stirring to 180°F (82°C) (crème anglaise). Remove from heat immediately.

    Stir in vanilla and salt. Pour through fine mesh into a bowl. Cool to room temperature in an ice water bath, then refrigerate for 4 hours.
