Instructions

1Infuse cannabis-infused butter in the heavy cream over low heat for 30 minutes (do not boil). Strain through fine mesh.

2Heat cannabis-infused cream with milk in a pot to 176°F (80°C) (do not boil).

3Whisk egg yolks with sugar until foamy and the mixture becomes lighter in color.

4Slowly pour hot cream mixture into egg yolk-sugar mixture while whisking constantly (tempering — not too fast!).

5Return mixture to pot and heat over medium heat while stirring to 180°F (82°C) (crème anglaise). Remove from heat immediately.

6Stir in vanilla and salt. Pour through fine mesh into a bowl. Cool to room temperature in an ice water bath, then refrigerate for 4 hours.

7Churn in an ice cream machine according to manufacturer's instructions. For frozen custard texture: incorporate less air than regular ice cream.

8Transfer to a container, cover surface with plastic wrap, and freeze for at least 2 hours.
