  • 60 ml 4.1 tbsp Heavy cream

  • 1 tsp 1 tsp Pure vanilla extract
  • 1 tbsp 1 tbsp Apple cider vinegar
  • 80 g 2.8 oz Raisins or pecans (optional)

Instructions

    Make pastry: cut cold butter into flour and salt until the mixture resembles coarse crumbs. Add ice water one tablespoon at a time, mixing until dough just holds. Disc, wrap and refrigerate 30 minutes.

    Preheat oven to 375°F (190°C). Roll pastry to 3 mm. Cut 12 rounds and press into a standard muffin tin. Refrigerate while preparing filling.

    Whisk cannabis-infused butter and brown sugar until combined. Add cream, eggs, vanilla and vinegar. Whisk until smooth — do not overbeat.

    Add raisins or pecans to each tart shell if using, then ladle filling to three-quarters full.

    Bake 18–20 minutes until pastry is golden and filling is set at the edges but slightly wobbly in the centre.
