Instructions
-
1Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
-
2Beat cannabutter, regular butter, peanut butter, and both sugars on medium speed until light and fluffy, about 3 minutes.
-
3Add eggs one at a time, beating well. Mix in vanilla extract.
-
4Whisk flour, baking soda and salt together. Fold into the butter mixture until just combined.
-
5Roll dough into 1-inch (2.5 cm) balls and place 2 inches apart on baking sheets. Press a fork into each ball twice in a crosshatch pattern to flatten to 1/2-inch thickness.
-
6Bake 10–12 minutes until edges are set and lightly golden. Centers will look underdone — that is correct. Cool on pan 5 minutes, then transfer to a wire rack.
-
7Store in an airtight container, clearly labelled as infused.
Pro Tips
- Start with one cookie. Wait 90 minutes before another — 24 cookies means a lower dose per piece but easy to overeat.
- Chill the dough 30 minutes for a thicker, chewier cookie.
- Do not overbake — peanut butter cookies firm up significantly as they cool.
