  • 100 g 3.5 oz Cherry jam
  • 150 g 5.3 oz Unsalted butter (softened — for frangipane)
  • 150 g 5.3 oz Caster sugar
  • 3 3 Eggs
  • 150 g 5.3 oz Ground almonds
  • 30 g 1.1 oz Plain flour (for frangipane)
  • 1 tsp 1 tsp Almond extract
  • 30 g 1.1 oz Flaked almonds (to top)

Instructions

    Make shortcrust pastry: rub cold cannabutter into flour and icing sugar until it resembles fine breadcrumbs. Add egg yolk and ice-cold water, mix until dough just comes together. Wrap in cling film and chill 30 minutes.

    Preheat oven to 375°F (190°C). Roll pastry to 3 mm and line a 23 cm loose-bottomed tart tin. Blind bake with parchment and beans 15 minutes, then 5 minutes without until pale gold.

    Make frangipane: beat softened unsalted butter and caster sugar until creamy. Beat in eggs one at a time. Fold in ground almonds, plain flour and almond extract.

    Spread cherry jam over the pastry base. Spoon frangipane over the top and smooth. Scatter flaked almonds over the surface.

    Bake 30–35 minutes until the frangipane is set and golden. Cover loosely with foil after 20 minutes if browning too quickly.

    Cool completely before serving. Dust with icing sugar if desired.
