Instructions

    Heat dashi broth to 140°F (60°C), stir in mirin and soy sauce. Cool completely.

    Whisk eggs without air bubbles—don't make foamy, just gently mix.

    Pass cooled dashi-egg mixture through fine sieve—for smooth texture without bubbles.

    Fill cups: layer chicken, shiitake, kamaboko, and shrimp in each.

    Gently pour egg mixture until 1 cm (about ½ inch) below rim.

    Cover cups with foil.

    Steam in steamer or pot (water at bottom) at 176°F (80°C, no hard boiling!) for 15–18 minutes.
