Instructions

1Sauté shallot and garlic in regular olive oil over medium heat until translucent.

2Add risotto rice and toast for 2 minutes until the grains become slightly transparent.

3Add white wine and stir until absorbed.

4Add warm broth one ladle at a time, waiting each time until the liquid is almost completely absorbed. Stir for approximately 20 minutes.

5When the rice is al dente, remove from heat. Stir in butter and Parmesan.
