Instructions

    Reduction: Finely dice 3 large shallots. In a small pot with 3.4 fl oz (100ml) dry white wine (Muscadet or Sancerre — fruity, not oaky) and 1.7 fl oz (50ml) white wine vinegar, reduce over medium heat to 2–3 tbsp of liquid. Keep the shallots in — they will be strained later. The acidic reduction is the emulsion base.

    Mounting the butter — the critical phase: Cut 5.3 oz (150g) ice-cold butter + 1.8 oz (50g) ice-cold cannabis butter into ½-inch cubes, return to refrigerator until use. Bring reduction to lowest heat (burner almost off, or use a double boiler). Stir in butter PIECE BY PIECE — always wait until the previous piece is completely incorporated before adding the next. Switch between pot and burner: sometimes heat briefly, sometimes remove from heat. Goal: emulsion at 60–149°F (65°C).

    Control consistency and temperature: Finished Beurre Blanc is creamy, sauce-thick — not liquid and not greasy-oily. If too thin: stir in a cold butter cube. If too thick: stir in 1 tsp warm water. Pass through a fine sieve (squeeze shallots for more flavor). Season with salt and white pepper. Keep warm immediately at max. 149°F (65°C).

    Serving: Do not boil Beurre Blanc (emulsion breaks). Immediately pour over fish (salmon, cod), steamed vegetables, or asparagus. Classic garnish: fresh tarragon leaves or chives.
