Instructions

    Prepare aquafaba: 120ml (4 oz) chickpea water from the can (do not drain, use directly — preferably from organic chickpeas in salt brine with no additives). Pour into the metal bowl of a hand mixer. Bowl and whisk must be absolutely FAT-FREE — a single drop of fat prevents whipping. Wipe clean with paper towels and a bit of vinegar. Add 1/4 tsp cream of tartar to the aquafaba — stabilizes the meringue.

    Whip — the patience phase: Whip aquafaba on medium speed until foamy (2 minutes). Then switch to highest speed. After 8–12 minutes, stiff, glossy peaks should form — significantly longer than egg white, but the result is equivalent. Test: invert bowl — nothing should fall out. Aquafaba meringue is ready when it's white, glossy, and holds its shape.

    Incorporate sugar and cannabis: Sprinkle 150g (5 oz) fine sugar (or powdered sugar for faster dissolution) in gradually while continuing to whip. After the last spoonful, whip for another 3–4 minutes until completely dissolved (no grittiness when rubbed between fingers). Add 1 tsp cannabis MCT oil (flavor-neutral!) at the end and fold in gently with a spatula — no further whipping.

    Shape and bake/dry: Using a piping bag (star tip) or two spoons, form dots or nests on parchment paper. For meringue drops: Preheat oven to 194°F (90°C) convection, dry for 2 hours (not baking!). Turn off oven and let meringues cool completely in the closed oven — overnight is ideal. For pavlova base: shape into a circle with a depression, 248°F (120°C), 90 minutes, then cool in the oven. Cannabis onset with MCT oil: 45–60 minutes, faster than other fats.
