Instructions

    Yeast dough for lahmacun: 300g (10.5 oz) flour (all-purpose), 1 tsp active dry yeast, 1 tsp salt, 1 tsp sugar, 180ml (6 fl oz) warm water, 2 tbsp cannabis oil. Knead for 8 minutes until very smooth and elastic — lahmacun dough needs to be rollable paper-thin, which requires well-developed gluten. Let rise covered for 1 hour.

    Vegan lahmacun filling: 200g (7 oz) soy crumbles or finely minced tempeh, 2 ripe tomatoes (drained of juice, finely diced), 1 red bell pepper (finely diced), 1 large onion (finely diced), 3 garlic cloves, 2 tbsp tomato paste, 2 tbsp cannabis oil, 1 tsp cumin, 1 tsp sweet paprika, 1/2 tsp red pepper flakes, 1/2 tsp cinnamon (the Turkish secret!), fresh parsley, salt. Mix everything in a bowl with your hands — the filling should be sticky and moist, not soupy.

    Roll out and top: Preheat oven to maximum (482°F (250°C) or higher), place baking stone or baking sheet in oven to preheat. Divide dough into 6–8 portions. Roll each portion on a floured surface paper-thin — as thin as possible, lahmacun is NOT pizza dough, it should be crispy and thin (2mm). Spread filling thin and evenly over the entire dough, all the way to the edges.

    Bake and serve: Bake lahmacun directly on preheated baking stone/sheet for 5–7 minutes at 482°F (250°C) until edges are crispy and filling is lightly caramelized. Straight from the oven: top with fresh parsley and arugula, squeeze lemon over, roll up and eat immediately. Cannabis onset: 60–75 minutes. The cinnamon in the filling provides a unique warm-spiced contrast to the cannabis flavor.
