Instructions

1Line a small loaf pan or shallow dish (approx. 6x8 inches / 15x20 cm) with parchment paper and lightly butter it.

2Melt sugar and corn syrup in a heavy pot without stirring over medium heat until amber-colored (approx. 170–175°C / 338–347°F).

3Carefully (it will splatter!) stir in cream — briefly reduce heat to medium.

4Stir in regular butter and continue to simmer until reaching 120°C (248°F / soft-ball stage; candy thermometer recommended).

5Remove pot from heat. Let cool slightly (under 80°C / 176°F), then stir in cannabutter, vanilla, and salt.

6Pour into prepared pan. Sprinkle with a bit of extra sea salt flakes.

7Let set at room temperature for at least 2 hours or 1 hour in refrigerator.

8Cut into approximately 40 pieces and wrap in parchment paper.
