Instructions

    Peel sweet potatoes and cut into 3/4 inch (2 cm) cubes. Finely chop onion and garlic, grate ginger.

    Sauté onion in 2 tbsp (30 ml) coconut oil over medium heat for 3–4 minutes until translucent. Cook garlic and ginger for 1 minute.

    Add curry powder, cumin, and turmeric, sauté in oil for 1 minute until fragrant. Fold in sweet potato cubes.

    Pour in coconut milk and vegetable broth. Season with salt, cover, and simmer over medium heat for 20 minutes until potatoes are tender.

    Stir in cannabis coconut oil after removing from heat (below 70°F / 21°C). Finish with lime juice, garnish with fresh cilantro and chili. Serve with basmati rice.
