1Peel sweet potatoes and cut into 3/4 inch (2 cm) cubes. Finely chop onion and garlic, grate ginger.

2Sauté onion in 2 tbsp (30 ml) coconut oil over medium heat for 3–4 minutes until translucent. Cook garlic and ginger for 1 minute.

3Add curry powder, cumin, and turmeric, sauté in oil for 1 minute until fragrant. Fold in sweet potato cubes.

4Pour in coconut milk and vegetable broth. Season with salt, cover, and simmer over medium heat for 20 minutes until potatoes are tender.
