1Rinse sushi rice until water runs clear. Bring to a boil with 1.2 times the volume of water, reduce heat, and simmer covered for 15 minutes. Let sit for 10 minutes off heat.

2Warm rice vinegar, sugar, and salt until dissolved. Drizzle hot over rice and gently fold in with a wooden spatula. Cool to room temperature — do not refrigerate.

3Prepare fillings: slice avocado into strips, julienne cucumber finely, julienne carrots. Have cannabis sesame oil ready.

4Cover bamboo mat with plastic wrap. Place nori sheet on top, wet your hands. Spread rice evenly over 2/3 of the nori, leaving a 1.2-inch (3 cm) border at the top. Place filling on the bottom third.

5Roll the mat from the bottom, pressing firmly as you roll. Cut finished roll with a sharp, wet knife into 8 pieces. Drizzle cannabis sesame oil as dip or lightly on the cuts. Serve with soy sauce and wasabi.
