Instructions

1Place rosin in a small, heat-safe sealed glass jar. Decarboxylate in the oven at 212°F (100°C) for 20–25 minutes — the concentrate is ready when no more bubbles rise and it looks clear and liquid.

2Cut onions into fine half-rings, bell pepper into bite-sized pieces, and finely dice garlic. The finer the onions, the creamier the sauce will be.

3Heat clarified butter in a pot over high heat until it lightly smokes. Add onions and sauté, stirring, until golden brown — this takes 8–10 minutes and is the foundation of the sauce.

4Add garlic to the onions and sauté for 1–2 minutes. Add beef in batches and sear on all sides over high heat. Season generously with salt and pepper.

5Pour in beef broth — no red wine needed, the broth provides enough depth and color. Stir well and scrape up any browned bits from the bottom of the pot.
