Instructions

1Soak saltfish overnight in cold water, changing the water several times. Alternative: boil for 30 min.

2Cook fish until tender, cool, remove bones and skin, and flake.

3Heat coconut oil. Sauté onions, garlic, and Scotch Bonnet (whole or halved — depending on desired heat).

4Add bell peppers in strips, simmer for 5 minutes.

5Add tomatoes and thyme. Simmer for 5 minutes.

6Stir in flaked saltfish.

7Gently fold in ackee — never stir, or it will break apart into mush.

8Warm at low heat for 5 minutes.

9Turn off heat. Stir in cold cannabis coconut oil.

10Serve with scallions and bammy (cassava bread) or regular bread.
