Instructions

    Soak saltfish overnight in cold water, changing the water several times. Alternative: boil for 30 min.

    Cook fish until tender, cool, remove bones and skin, and flake.

    Heat coconut oil. Sauté onions, garlic, and Scotch Bonnet (whole or halved — depending on desired heat).

    Add bell peppers in strips, simmer for 5 minutes.

    Add tomatoes and thyme. Simmer for 5 minutes.

    Stir in flaked saltfish.

    Gently fold in ackee — never stir, or it will break apart into mush.
