Instructions

  1. 1
Combine chicken with soy sauce, vinegar, crushed garlic, bay leaves, peppercorns, and brown sugar in a bowl. Marinate for 30 minutes.
  2. 2
Heat oil in a heavy pot. Remove chicken from marinade and sear on all sides until golden brown — 4–5 minutes per side. Remove from pot.
  3. 3
Pour the marinade into the pot. Bring to a boil.
  4. 4
Return chicken to pot. Reduce heat, cover. Braise gently for 30 minutes.
  5. 5
Uncover, increase heat slightly. Reduce for 10–15 minutes until sauce is dark, thick, and caramelized.
  6. 6
Optional: Stir in coconut milk for a creamy version, simmer for another 5 minutes.
  7. 7
Off heat, stir cannabis-coconut oil cold into a spoonful of sauce (outside the pot) — this lets you mix it in portions.
  8. 8
Plate chicken with rice. Pour sauce over top. Add the cannabis-coconut oil portion.

Pro Tips

  • Adobo tastes tangy-salty-sweet — that's Philippine harmony. Don't skip the vinegar.
  • The longer you reduce the sauce, the more caramelized and intense it becomes. Patience pays off.
  • Cannabis-coconut oil fits perfectly with the light coconut flavor of this Philippine profile.
  • Leftovers keep 2–3 days in the fridge — the flavor intensifies each day.
