Instructions

  1. 1
Marinate chicken legs with garlic, vinegar, and soy sauce for 30 min.
  2. 2
Melt cannabutter in a deep skillet. Remove chicken from marinade.
  3. 3
Sear chicken skin-side down over high heat for 5 min until golden brown.
  4. 4
Pour in marinade + coconut milk + bay leaf + pepper.
  5. 5
Bring to a boil. Simmer over low heat for 30 min — liquid reduces to three-quarters.
  6. 6
Remove chicken. Season sauce with sugar.
  7. 7
For crispy skin: Return chicken to pan without liquid for 3 min.
  8. 8
Serve over jasmine rice with scallions and the reduced sauce.

Pro Tips

  • The vinegar amount sounds like a lot, but it loses its harshness during braising — only the freshness remains.
  • Add cannabutter when searing — the long cooking times fully activate the THC.
  • For authentic adobo: Better the next day — sauce penetrates the meat more deeply.
