Instructions

  1. 1
Cook spaghetti in plenty of salted water until al dente. Reserve 2 cups of pasta water generously.
  2. 2
Slice garlic very thinly — do not mince. Slices develop more roasting flavors.
  3. 3
Warm olive oil in a wide pan over medium heat. Add garlic slices and chili.
  4. 4
Over LOW heat, slowly toast for 3–4 minutes until golden. Garlic should turn golden, NOT burn — burnt garlic ruins the dish.
  5. 5
Add 1.7 oz (50 ml) pasta water to the oil-garlic mixture and let it foam — this creates an emulsion.
  6. 6
Add drained spaghetti directly to the pan. Toss, add another 1.7 oz (50 ml) pasta water, and emulsify for 1–2 minutes.
  7. 7
Sprinkle chopped parsley over everything. Toss well.
  8. 8
Plate the pasta. Drizzle cold cannabis olive oil on top. Optional: some Parmesan.

Pro Tips

  • The emulsion trick: Pasta water (starch) + olive oil = creamy sauce without cream. More water = more creaminess.
  • NEVER brown garlic — golden is the sweet spot. Black = bitter = throw it away.
  • Cannabis olive oil doubles down on the olive oil character of the dish without changing it.
  • Midnight pasta: this dish comes together in 15 minutes from pantry staples — the favorite of all chefs after their shift.
