Instructions

  1. 1
Combine flour, yeast, sugar and salt. Whisk together warm milk, egg and vegetable oil. Pour wet into dry and mix until a soft dough forms. Knead 5 minutes. Cover and rest 45 minutes until doubled.
  2. 2
Make infused maple glaze: whisk melted cannabis-infused butter into maple syrup until fully combined. Set aside at room temperature.
  3. 3
Punch down dough and divide into 8 pieces. On a floured surface, stretch each into an oval roughly 20 cm long and 10 cm wide, about 5 mm thin.
  4. 4
Heat frying oil to 375°F (190°C). Fry 1–2 pastries at a time for 60–90 seconds per side until puffed and deep golden. Drain on paper towels.
  5. 5
While still hot, brush each BeaverTail generously with the cannabis maple glaze. Dust with cinnamon sugar and a pinch of flaky salt.
  6. 6
Serve immediately — BeaverTails are best within minutes of frying.

Pro Tips

  • The infusion is in the maple glaze, not the dough — making dosing straightforward.
  • Use a thermometer for oil temperature: too cool and dough absorbs oil; too hot and it burns before cooking through.
  • One BeaverTail is one serving. Hot fried dough absorbs cannabinoids quickly — onset may be faster than typical edibles.
