Instructions

  1. 1
Preheat oven to 320°F (160°C) fan or 340°F (170°C) conventional. Grease a 20×30 cm tin and line with baking parchment.
  2. 2
Melt cannabutter, golden syrup and brown sugar together in a large saucepan over low heat, stirring until the sugar dissolves. Do not boil.
  3. 3
Remove from heat and stir in rolled oats, salt and dried fruit if using. Mix until every oat is coated.
  4. 4
Tip into the prepared tin and press down firmly and evenly with the back of a spoon.
  5. 5
Bake 20–25 minutes until deep golden at the edges but still slightly soft in the centre.
  6. 6
Score into 16 bars while still warm. Leave to cool completely in the tin before removing.
  7. 7
Store in an airtight container at room temperature for up to 5 days. Label clearly.

Pro Tips

  • For chewier flapjacks reduce baking time by 3 minutes. For crunchier, bake until uniformly golden.
  • Never use instant oats — rolled oats give the correct texture.
  • Eat one bar and wait at least 90 minutes — these are very easy to overeat.
