Instructions
-
1Cut meat into 1.5-inch (4 cm) cubes, pat dry, season with salt and pepper. Coat in flour.
-
2In a heavy pot with oil over high heat, brown meat in batches — deep browning is essential for depth of flavor in the stew.
-
3Remove meat. Sauté onions and celery in the same pot for 5 minutes.
-
4Add garlic and tomato paste, roast for 2 minutes. Deglaze with beer, bring to a boil.
-
5Add beef broth, Worcestershire sauce, thyme, and bay leaves. Return meat to the pot.
-
6Bring to a boil, then reduce to lowest heat. Braise covered for 60 minutes.
-
7Add carrots, potatoes (diced), and mushrooms. Braise for another 40–45 minutes until everything is tender.
-
8Remove bay leaves and thyme sprigs. Season to taste with salt and pepper.
-
9Serve in deep bowls. Place a cold pat of cannabis butter on each serving — it will melt instantly into the broth.
Pro Tips
- Coating meat in flour naturally thickens the sauce slightly.
- Dark beer (Guinness, Stout) adds depth and a subtle bitterness — perfect for beef.
- Cannabis butter on hot stew is like a pat of butter on soup — a classic finishing touch.
- Even better the next day — all flavors develop overnight.
