Instructions

  1. 1
Bring chicken legs to a boil in broth with cinnamon stick and allspice berries. Simmer gently for 30 minutes until cooked. Remove chicken and shred from the bone.
  2. 2
Strain broth through a sieve, return to pot. Remove cinnamon stick and allspice.
  3. 3
Heat olive oil in a separate pot. Sauté onion for 5 minutes until translucent. Stir in garlic, allspice, and turmeric, sauté for 1 minute.
  4. 4
Add freekeh, lightly toast until it becomes fragrant and nutty.
  5. 5
Add seasoned freekeh to the broth. Stir in chickpeas. Simmer over medium heat for 20 minutes until freekeh is tender.
  6. 6
Return shredded chicken to the soup. Season with salt and pepper.
  7. 7
Pour into bowls. Top with pine nuts and parsley. Drizzle generously with cold cannabis olive oil as a finishing touch.

Pro Tips

  • Freekeh has a unique smoky flavor from roasting — it cannot be replaced.
  • Always add cannabis olive oil cold at the end — the aromatic Levantine spice combination cannot handle further heating.
  • Toast pine nuts in a dry skillet for 2 minutes beforehand — they add crunch and nuttiness.
  • Freekeh is available at Middle Eastern or natural food markets. Alternatively: use spelt with shorter cooking time.
