Instructions

  1. 1
Bring pork belly in water to a boil, skim off foam.
  2. 2
Add tomatoes and onions, simmer for 30 minutes until meat is tender.
  3. 3
Dissolve tamarind paste in some broth, add to the pot. Stir in fish sauce.
  4. 4
Add radishes and green beans, cook for 5 minutes.
  5. 5
Add chilies and kangkong, cook for 2 minutes — spinach should just wilt.
  6. 6
Taste and adjust acid and salt: sinigang is sour, that's essential.
  7. 7
Turn off heat. Drizzle cold cannabis olive oil into each serving bowl.

Pro Tips

  • Sinigang is the Filipino answer to every mood — sour, salty, umami.
  • The sourness comes from tamarind — more paste = more sour. Always taste.
  • Cannabis oil cold into the sour broth: acid and fat emulsify slightly when stirred together.
