  • 200 ml 13.5 tbsp Heavy cream
  • 100 ml 6.8 tbsp Dry white wine
  • 1 tsp 1 tsp Sugar
  • 1 tsp 1 tsp Salt
  • 1 pinch 1 pinch White pepper
  • 1 pinch 1 pinch Nutmeg (freshly grated)
  • 2 tbsp 2 tbsp Lemon juice
  • 4 stalks 4 stalks Asparagus (raw, for garnish, cut into 2cm pieces)
  • 2 tbsp 2 tbsp Fresh chives (cut into rings)

Instructions

    Peel asparagus, trim ends. Cook peels and ends for 15 minutes in salted and sweetened water — this is your stock.

    Strain stock, set aside. Cut asparagus into pieces (reserve 4 spears for garnish).
