Instructions

    Prepare kimchi: 300g aged kimchi (fermented at least 2–3 weeks — fresh kimchi doesn't work well for Jjigae). Roughly chop the kimchi. Reserve the kimchi liquid — it's the most important flavor carrier. If your kimchi is too sour: add a bit of water while cooking.

    Brown the meat: Cut 200g pork neck or belly into 2cm pieces. Brown in a small amount of sesame oil over medium heat until lightly browned. The fat from the pork carries the flavors. Alternative: firm tofu (press first) as a vegan option.

    Build the Jjigae: Add kimchi to the meat, sauté together for 2–3 minutes. Add 600ml water or dashi broth (kombu + bonito — umami boost). Add 2 tbsp gochujang (Korean chili paste, adjusted to taste), 1 tbsp doenjang (or light miso), 1 tbsp soy sauce, 1 tsp sugar. Bring to a boil, simmer for 20 minutes.

    Tofu and cannabis: Cut 200g firm tofu into cubes, add to the pot and simmer for 5 minutes. Remove pot from heat. Stir in 3 tbsp cannabis oil. Serve immediately — kimchi jjigae loses freshness quickly. Finish with green onions and sesame oil.

    Plating and sides: Serve in the pot (traditionally in a Korean stone pot "Ttukbaegi" that comes directly to the table). Serve with: white steamed rice, sesame seeds, kimchi as a side, sesame oil. The combination of fatty broth + cannabis oil provides high bioavailability. Onset: 45–75 minutes.
