Instructions

1Remove stems and seeds from dried chilis. Soak in boiling hot water for 15 minutes until soft.

2Blend soaked chilis with tomatoes, half an onion, garlic, cumin, and oregano into a smooth paste.

3Cut beef into large chunks and season with salt. Sear on all sides in a heavy pot over high heat.

4Pour in chili paste sauce, cinnamon stick, bay leaves, and beef broth. Bring to a boil, then reduce to low heat. Braise covered for 2.5 hours until meat falls apart.

5Remove meat and shred finely with two forks. The braising liquid is the consommé — strain through a sieve and skim off fat.

6Pour consommé into bowls (for dipping). Stir cold cannabis coconut oil into the consommé bowls.

7Briefly dip tortillas in the fat from the top of the consommé and pan-fry over medium heat until lightly crispy.

8Place cheese on half a tortilla, add birria meat on top, fold in half. Pan-fry for 2–3 minutes until cheese melts.

9Serve with diced onion, cilantro, and cannabis consommé for dipping.
