Instructions

1Place veal in cold water, bring to a boil briefly, drain and rinse — blanching removes impurities and keeps the sauce white.

2Return meat to stock with carrots and bouquet garni. Simmer gently for 60 minutes. Add mushrooms and pearl onions after 40 minutes.

3Remove meat and vegetables, strain stock through a fine sieve — reserve 600 ml (about 2.5 cups).

4Roux: Melt butter, stir in flour, cook 2 minutes until pale. Gradually whisk in warm stock, stirring constantly.

5Stir in cream, simmer gently 10 minutes until sauce thickens.

6Temper egg yolks with 3 tbsp hot sauce, then stir into the sauce. Do not boil — or it will curdle.

7Stir in lemon juice, salt, pepper and nutmeg. Return meat and vegetables.

8Swirl in cannabis butter in small pieces (montage) — it makes the sauce glossy and silky. Serve immediately.
