Instructions
-
1Heat cannabutter in a large pot. Sauté onions and carrots for 5 minutes.
-
2Add garlic and tomato paste, roast for 2 minutes.
-
3Stir in diced beets — don't forget gloves, they stain everything intensely.
-
4Add tomatoes, broth, and sugar. Bring to a boil.
-
5Stir in diced potatoes and cabbage. Simmer for 35 minutes over medium heat.
-
6Stir in vinegar — it sets the bright red color and brings the necessary acidity.
-
7Taste and adjust: salt, pepper, perhaps more vinegar.
-
8Serve in bowls. Add a generous dollop of sour cream in the center, plenty of fresh dill on top.
Pro Tips
- Don't skip the vinegar — it's chemically necessary to preserve the red color. Without vinegar, borscht turns gray-brown.
- Real beef broth makes it a feast. With vegetable broth it's fully vegan.
- Better and deeper in flavor on the second day — ideal for meal prep.
