Instructions
-
1Cut broccoli into small florets. Peel the stem and dice it — contains many nutrients.
-
2Melt cannabis butter in a large pot. Sauté onions over medium heat for 3 minutes until translucent.
-
3Sauté garlic for 1 minute. Add broccoli and lightly toast (2 minutes).
-
4Add broth and bring to a boil. Cover, simmer 12-15 minutes over low heat until broccoli is tender.
-
5Turn off heat. Stir in cream, then puree finely with an immersion blender.
-
6Stir in Parmesan until melted. Season with nutmeg, salt, and white pepper.
-
7To serve: Toast sliced almonds in a dry pan until golden brown. Top the soup with almonds and drizzle with olive oil.
Pro Tips
- Don't overcook — overcooked broccoli loses its beautiful green color and turns gray.
- For vegan version: Replace cannabis butter with cannabis oil, heavy cream with oat milk, and Parmesan with nutritional yeast.
- Don't bring the soup back to a boil after pureeing — this preserves cannabinoids better.
