Instructions

    Briefly blanch beef shank and pork knuckle (5 min. in boiling water), drain and rinse.

    Set up fresh water (3 quarts), add meat. Char onion and shallots directly over gas flame, add to broth.

    Crush lemongrass with knife back, add to broth. Simmer at medium heat for 2.5 hours.

    Heat annatto seeds in 3 tbsp neutral oil briefly until the oil becomes bright orange. Sauté garlic and chilies in it.

    Add chili-annatto oil to the broth, stir in shrimp paste and fish sauce. Simmer for another 20 minutes.

    Remove meat, slice thinly. Strain broth through a sieve.

    Cook noodles according to package directions.

    Arrange: Noodles in deep bowls, meat on top, pour in boiling hot broth.
