Instructions

  1. 1
Sauté shallots and garlic in 1 tbsp oil briefly. Add water or broth, bring to a boil.
  2. 2
Stir in lemongrass and tamarind paste. Simmer for 5 minutes.
  3. 3
Add pineapple pieces, simmer for 3 minutes — they add sweetness and sourness.
  4. 4
Add tomatoes. Stir in fish sauce and sugar. The balance principle: sour (tamarind), sweet (pineapple/sugar), salty (fish sauce).
  5. 5
Gently add fish pieces. Poach gently for 5-6 minutes — do not boil.
  6. 6
Stir in bean sprouts and chilies. Remove lemongrass.
  7. 7
Pour into bowls. Top with cilantro and rau ram. Drizzle with cold cannabis olive oil as finishing.

Pro Tips

  • The three-note balance of sweet-sour-salty is the foundation — taste constantly and adjust.
  • Add cannabis olive oil cold at the end — never cook it into the hot soup.
  • Rau ram (Vietnamese cilantro leaf) gives the characteristic note — available at Asian markets.
  • Catfish is authentic, but any white fish works.
