Instructions

  1. 1
Precook soaked beans in fresh water for 45 minutes. Drain.
  2. 2
Brown bacon in a cassole (earthenware pot). Brown sausages on all sides until golden, remove.
  3. 3
Sauté onion and garlic in the fat until translucent. Stir in tomatoes, reduce for 5 minutes.
  4. 4
Add precooked beans, broth, and bouquet garni. Return sausages and bacon. Braise for 60 minutes at 320°F (160°C) in the oven.
  5. 5
Place duck legs on top. Braise for another 60 minutes.
  6. 6
Cannabis crust: Mix breadcrumbs with melted cannabis butter and parsley.
  7. 7
Spread crust evenly over the cassoulet. Increase oven temperature to 392°F (200°C), bake 20-25 minutes until the crust is golden and crispy.

Pro Tips

  • Work cannabis butter into the breadcrumbs — the crust insulates it from direct heat.
  • Authentic cassoulet takes at least 3 hours — shortcuts destroy its character.
  • Traditionally the crust is pressed down multiple times during baking — a new layer forms each time.
  • Cassoulet improves enormously on the second and third day.
