Instructions
-
1Make tonkatsu sauce: Mix Worcestershire sauce, ketchup, soy sauce, and sugar.
-
2Sesame dressing: Mix Kewpie mayo with rice vinegar and half the sesame seeds. Stir in chilled cannabis sesame oil.
-
3Pound chicken to ½ in (1.5 cm) thickness, season with salt and pepper. Bread classically: flour → egg → panko.
-
4Heat oil to 340°F (170°C). Fry chicken 4–5 minutes per side until golden brown. Drain on paper towels, rest 2 minutes.
-
5Slice chicken diagonally into strips.
-
6Cabbage slaw: Toss shredded white cabbage with rice vinegar, a pinch of salt, and sugar. Let sit 5 minutes.
-
7Build bowls: Rice as base, cabbage slaw and carrot julienne as sections, katsu strips on top.
-
8Drizzle tonkatsu sauce over the chicken, cannabis sesame dressing over the slaw. Top with sesame seeds and green onions.
Pro Tips
- Panko breadcrumbs are the difference from regular breadcrumbs — looser and crispier.
- Bowl segmentation makes eating satisfying: salad, rice, protein each in its own section.
- Cannabis sesame oil in the dressing: Kewpie mayo takes it perfectly.
- Leftover chicken makes katsu sando: cold chicken between milk bread with cannabis mayo.
