Instructions

    Place chicken between plastic wrap and pound to about 0.6 inches (1.5 cm) thick. Season with salt and pepper, dredge in flour (shake off excess).

    Heat olive oil and half the butter in a large skillet. Sear chicken on both sides for 4–5 minutes until golden brown. Remove from pan.

    Deglaze with Marsala — it will foam briefly. Reduce for 2 minutes at high heat.

    Add chicken broth and cream, add thyme. Simmer for 5 minutes until sauce thickens.
