Instructions

  1. 1
Char poblano peppers directly over flame on all sides. Sweat in plastic bag 10 minutes, remove skin. Make lengthwise slit, carefully remove seeds.
  2. 2
Brown ground beef in oil. Add tomatoes, spices, fruit, raisins, and almonds. Simmer 20 minutes until thick filling.
  3. 3
Carefully fill peppers, secure opening with toothpick.
  4. 4
Warm in oven at 356°F (180°C) for 15 minutes.
  5. 5
Nogada (walnut sauce): Puree walnuts, cream cheese, sour cream, and sherry until creamy in blender.
  6. 6
Stir cold Cannabis Olive Oil into finished nogada.
  7. 7
Place peppers on plate, pour nogada generously over.
  8. 8
Garnish with pomegranate seeds and parsley leaves — green, white, red (Mexican flag).

Pro Tips

  • Chiles en Nogada are Mexico's national dish of September — patriot colors on the plate.
  • Always blanch and skin walnuts: brown skin makes nogada bitter.
  • Cannabis oil cold into walnut sauce — maximum effect, sauce stays unheated.
