1Dashi broth: Place kombu in 1 L (33.8 oz) cold water, let soak 30 minutes. Warm slowly over medium heat, remove kombu just before water boils (around 140°F/60°C).

2Bring water to 176°F (80°C). Add katsuobushi, let steep 5 minutes. Strain through fine sieve — this is the dashi broth.

3Season dashi with soy sauce, mirin and sake — the broth should be clear, golden and umami-rich.

4Cook udon noodles according to package instructions (fresh udon: 2–3 min., dried: 8–10 min.).

5Drain noodles, place in bowls.

6Pour hot dashi broth over noodles.

7Add aburaage or tempura, nori cut into strips, scallions cut on bias.
