1Prepare anchovy broth: Steep 1 liter (4 cups) water with a handful of dried small anchovies and kombu seaweed over low heat for 15 minutes. Strain. Alternatively: vegetable broth.

2Bring broth to boil. Stir in doenjang paste — it gives the stew its characteristic depth.

3Add garlic and onion, simmer for 3 minutes.

4Add zucchini, mushrooms, and tofu cubes. Simmer over medium heat for 10 minutes until tender.

5Season with gochugaru (red chili flakes) to desired heat level.

6Slice scallions into rings and sprinkle over. Stir in regular sesame oil.
