Instructions

    Prepare anchovy broth: Steep 1 liter (4 cups) water with a handful of dried small anchovies and kombu seaweed over low heat for 15 minutes. Strain. Alternatively: vegetable broth.

    Bring broth to boil. Stir in doenjang paste — it gives the stew its characteristic depth.

    Add garlic and onion, simmer for 3 minutes.

    Add zucchini, mushrooms, and tofu cubes. Simmer over medium heat for 10 minutes until tender.

    Season with gochugaru (red chili flakes) to desired heat level.
