1Dry-cook onions WITHOUT oil in large pot on medium heat for 20 minutes, stirring constantly—they caramelize slowly. This is the secret of doro wat.

3Stir in berbere and tomato paste, toast on low heat for 3 minutes.

4Add chicken, coat all sides with the paste.

5Pour in broth, cover, braise on low heat for 45 minutes.

6Pierce eggs all over several times, lay in the sauce, braise for another 15 minutes.
