1Bring cannabutter to 45–50°C (113–122°F) for Hollandaise (warm, not hot — or you'll destroy cannabinoids). Keep warm in a pitcher.

2Water bath for Hollandaise: Heat pot with 2 inches (5 cm) water to 65°C (149°F) (gentle simmer, NOT boiling). Set bowl on top — bottom must not touch water.

3Add egg yolks + lemon juice to bowl, whisk vigorously to ribbon stage: mixture is pale yellow, thick, and forms a ribbon when you lift the whisk (about 3–4 min).

4Add cannabutter drop-by-drop — very slowly at first — to egg yolk mixture. After first 3–4 tbsp, addition can speed up. Keep sauce at 60–65°C (140–149°F). Season with salt, white pepper, cayenne.

5Poaching water: 1 quart (1 liter) lightly salted water + 2 tbsp white vinegar at 90°C (194°F) (gentle simmer, never boiling — or egg white falls apart). Use fresh eggs.

6Crack each egg into a small cup. Create whirlpool in water with spoon, slip egg into center. Poach 3 minutes for soft (yolk still runny). Remove with slotted spoon, drain on paper towel.

7Assemble simultaneously: Toast English muffins, warm breakfast ham or salmon. On warm plate: muffin → ham → poached egg → generous Cannabis Hollandaise drizzle → fresh chives.
