Instructions

  1. 1
Heat olive oil. Sauté onion and carrots for 5 minutes until translucent. Stir in garlic, tomato paste, paprika, and cumin, toast for 2 minutes.
  2. 2
Stir in lentils and bulgur. Add broth, bring to a boil. Simmer on low heat for 20 minutes until everything is soft.
  3. 3
Blend completely smooth with an immersion blender. Stir in turmeric, season with salt and lemon juice. Consistency: creamy but pourable.
  4. 4
Nane-Yağ: Melt butter until it foams golden brown. Stir in Aleppo pepper and mint, toast for 30 seconds on low heat. Remove from heat.
  5. 5
Stir cannabis olive oil into the cooled Nane-Yağ at below 150°F (65°C) — never directly over flame.
  6. 6
Pour soup into bowls. Drizzle Nane-Yağ generously on top. Serve immediately.

Pro Tips

  • Ezogelin means 'Ezo the bride' in Turkish — named after a legendary woman from Turkey who cooked this soup for her husband.
  • Never add cannabis olive oil directly to hot butter — first cool to below 150°F (65°C), then stir in.
  • Bulgur gives the soup body — without it the soup becomes too thin. Don't skip it.
  • The mint butter is not optional garnish — it's the soul of the soup.
