Instructions

    Drain soaked chickpeas (NOT canned — they don't work for falafel) and pat dry.

    Process chickpeas with onion, garlic, herbs, spices, baking powder, and flour in a food processor into a coarse paste — don't over-mix, some chunks should remain.

    Season with salt and refrigerate for at least 30 minutes — it will become firmer.

    Make tahini sauce: Mix tahini with lemon juice, 3–4 tbsp cold water, and salt until creamy.

    Heat oil to 347°F (175°C). Form falafel into balls (walnut-sized) with wet hands.

    Fry in batches for 3–4 minutes until deep golden brown. Drain on paper towels.

    Stir cold Cannabis Olive Oil into the tahini sauce — just before serving.
