Instructions

1Soak beans and cured meat separately overnight (desalt the meat).

2Cook beans with fresh water, bay leaf, and orange peel for 1.5 hours until soft.

3Render bacon in oil, brown onions and garlic in the fat.

4Add cured meat, sausages, and bacon to the beans.

5Simmer together for another 1 hour until everything is tender and sauce is thick.

6Pour cachaça directly into the pot (flambé optional for effect), simmer uncovered for 10 minutes.

7Add blood sausage slices only in the last 15 minutes.
