Instructions

  1. 1
Prepare chipotle crema: Mix sour cream, chipotle sauce, minced garlic, and lime juice. Refrigerate.
  2. 2
Slice white cabbage into thin strips, toss with lime juice and salt. Let sit for 10 minutes.
  3. 3
Dice avocado, toss with lime juice, salt, and cilantro.
  4. 4
Prepare beer batter: Mix flour and cornstarch with paprika, salt, and pepper. Stir in ice-cold beer — mix briefly, lumps are fine. Do not let rest.
  5. 5
Heat oil to 350°F (175°C). Cut fish fillets into pieces, season with salt and pepper. Coat in batter.
  6. 6
Fry in batches for 3–4 minutes until golden brown and crispy. Drain on paper towels.
  7. 7
Warm tortillas directly over a gas flame or in a dry skillet.
  8. 8
Stir cannabis coconut oil into the chipotle crema cold — just before serving.
  9. 9
Assemble tacos: cabbage slaw, fish, avocado dice, cannabis chipotle crema, cilantro, lime.

Pro Tips

  • Ice-cold batter + hot oil = perfect crispy coating. Chill the batter 30 minutes before frying.
  • Pollock is cheaper than cod and works just as well for fish tacos.
  • Cannabis coconut oil in the creamy chipotle sauce — coconut flavor is neutral and complements the seafood-chili profile.
  • Baja-style means: more crema than anything else. Be generous.
