Instructions

    Curry paste: Pound all ingredients in a mortar to a smooth paste — 10-15 minutes of work, but the difference from jarred is enormous. Alternative: 3 tbsp good jarred paste.

    Stir in curry paste, cook 3-4 minutes in the coconut cream until fragrant and the kitchen smells green.

    Add chicken strips, cook for 2 minutes. Pour in remaining coconut milk.

    Stir in fish sauce, palm sugar, and kaffir lime leaves. Simmer for 10 minutes over medium heat.

    Add Thai eggplants in the last 5 minutes — they should still have a slight bite.
