    Soak barley: Soak 7 oz (200g) pearl barley in cold water for 1–2 hours. This significantly shortens cooking time and creates a creamier texture. Drain. Meanwhile: Dice 3.5 oz (100g) smoked bacon or ham.

    Sauté vegetable base: Render bacon in a large pot over medium heat until crispy. In the bacon fat: 1 onion (diced), 2 carrots (sliced), 2 celery stalks (sliced), 1 parsnip (diced) — sauté for 5 minutes until translucent. Toast 2 garlic cloves. Add bay leaf, thyme, juniper berries.

    Cook barley: Stir in soaked barley, deglaze with 1.5 L (6 cups) vegetable or meat broth. Bring to a boil, reduce to low heat, simmer for 35–45 minutes until barley is tender but still has a slight bite. Stir regularly — barley settles quickly.

    Stir in cannabis oil: Remove pot from heat. Stir in 3–4 tbsp cannabis oil and mix well. DO NOT boil again — cannabis oil always goes in at the end, never while cooking. Season with salt, pepper, nutmeg. Stir in fresh parsley.

    Adjust consistency: Barley soup thickens considerably as it sits. For a creamier soup: stir in 3.5 fl oz (100 ml) heavy cream. If too thick: add some hot water. Serve in deep bowls, garnish with chives and a drizzle of good olive oil.
